Baked Boneless Chicken Thighs

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Directions

Preheat oven to: 400 degrees (F)

Place (fully defrosted) chicken thighs, rinsed and patted dry with paper towels, into a glass or metal bowl.

Add the olive oil and spices, and use your hands to toss and coat evenly.

Place the thighs in the pan, or directly in the skillet. If using a baking pan, line it with a sheet of foil (to simplify clean-up).

Bake about 30 minutes until the internal temperature hits 165 degrees.



My Notes

The seasoning has a lot of ingredients. Chipotle pepper works as well as cayenne, but go easy in either case. Use a cast iron skillet or cooking pan. At 400 degrees F, Pyrex and other oven-safe cookware can break.
