Corn Bread

from Indian Head Stone Ground Yellow Corn Meal

Ingredients

  • 1 cup corn meal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup oil
  • 1 cup milk
  • 1 egg (beaten)

Directions

Preheat oven to: 425 degrees (F)

Preheat the oven to 425 degrees. Combine the dry ingredients and whisk together. Add the milk, oil, and eggs, and blend with a hand mixer. Use a buttered 9"x9"x2". Pour in the batter and let it level. Bake for 20 minutes. Remove from the oven and let sit for 5 minutes, then transfer to a wire rack to cool.

The recipe is from the back of the Indian Head corn meal bag. For a sweeter cornbread, use the Corn Muffins recipe.
