Keto Egg Roll in a Bowl

Ingredients

  • 2 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1/2 cup onion, diced
  • 5 green onions (scallions), sliced on a bias, white and green
  • 1 pound ground pork
  • 1/2 tsp ground ginger
  • sea salt and black pepper, to taste
  • 1 tbsp Siracha or garlic chili sauce (or more, to taste)
  • 14 ounce bage coleslaw mix (green and red cabbage, carrots)
  • 3 tbsp gluten-free soy sauce
  • 1 tbsp unseasoned rice vinegar
  • 2 tbsp toasted sesame seeds

Directions

Preheat oven to: Cast Iron Skillet

Heat the sesame oil in a large skillet over medium high heat

Add the garlic, onion, and white portion of the green onions. Sauté until the onions are translucent and the garlic is fragrant.

Add the ground pork, ginger, salt, pepper, and Siracha. Sauté until the pork is cooked through.

Add the coleslaw mix, soy sauce, and rice vinegar. Sauté until the coleslaw is tender.

Top with green onions and sesame seeds before serving.



My Notes

Just noticed the weird number of times they used the word "Sauté" in the instructions. The Siracha goes a long way so be careful with that. I use regular soy sauce, and a broccoli slaw mix from the Fruit Center, which I think is tastier and probably healthier. I never use the toasted sesame seeds. A pointless extra.
