Garlic-Parmesan Potatoes

Ingredients

  • 1 pound fingerling potatoes, halved lengthwise
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp chopped fresh parsley

Directions

Preheat oven to: 425 degrees (F)

Put everything EXCEPT THE BUTTER AND THE PARSLEY in a mixing bowl and toss with your hands until all of the potatoes are well-coated.

Get out the cast-iron skillet. On medium-high heat melt the butter, then add in the potatoes.

Cook about 2 minutes, tossing with a wooden spoon, getting all the potatoes coated in butter.

Move the skillet to the oven, and cook 15 to 20 minutes, until the potatoes are soft.

Remove the skillet from the oven, and sprinkle the potatoes with chopped parsley, IF YOU MUST.



My Notes

The original recipe includes a teaspoon of lemon zest, which seems affected and unnecessary. I feel the same way about the chopped parsley, but that actually looks nice, so do that if you have the parsley.
