Nanny's Scones

Ingredients

  • 4 cups all-purpose flour
  • 4 tsp baking powder
  • 1/2 cup sugar (or less)
  • 1 stick (1/2 cup) unsalted butter, cold
  • 1 cup raisins (or less)
  • 1 1/3 cups light cream
  • 1 egg yolk, for egg wash

Directions

Preheat oven to: 375 degrees (F)

Whisk the flour, baking powder, and sugar together in a large bowl.

Cut in the butter, then add the raisins and light cream. Combine just until the dough comes together — don't overwork it.

Turn the dough out onto a floured surface and pat it into a round about 1/2" thick.

Brush the top with the egg yolk for an egg wash.

Score into triangles, or cut into whatever shapes you like.

Bake 10-15 minutes, possibly longer, until golden.



My Notes

The main note here is that 4 cups of flour makes a LOT of scones and if you are not feeding a crowd it works very well to cut everything by half.
