Oatmeal, Apple, and Banana Bread

Ingredients

  • 2+ cups old-fashioned oatmeal
  • 2 apples
  • 100 ml water
  • 50g raisins
  • 1 banana, thoroughly mashed
  • 2 large eggs
  • 1 tsp (maybe 1.5) baking powder
  • 1 tsp cinnamon

Directions

Preheat oven to: 320 degrees (F)

Pulverize the oats to a flour-like consistency with the mini Cuisinart, and transfer to a mixing bowl.

Peel and core two apples, and cut into small chunks for the bullet blender.

Blend the apples and water in the Bullet ... most of the water for the bread comes from here, so don't overdo it, or the batter will be too runny.

Pour blended apples into the pulverized oats. Add 50g raisins, mashed up banana, and eggs.

Add baking powder and cinnamon.

Blend the whole sticky mess with a baking spatula.

Pour the batter into a lightly oiled, large bread pan. I usually use a 6-cup muffin pan, about 140g of batter per cup. This bakes more thoroughly than a single pan (in a pan the bread always seems a little damp, to me).

Bake for 50 minutes (maybe a bit more). Remove from oven and let cool.



My Notes

... and raisins, but titles can't go on forever. This was a YouTube video of a cake without flour, sugar, or butter, so kind of keto, and tastes pretty good. What they call 1 cup of oats is clearly more than that. I also doubled the cinnamon they describe, and suspect that a little extra baking powder may be in order. The resulting bread tends toward damp, so maybe also cut back on the water used to prep the apples.
