Slow Cooker Beef and Mushrooms

Ingredients

  • 2 tbsp olive oil
  • 3 pounds stew meat
  • salt and pepper to taste
  • 3 cups beef broth
  • 1 package dry onion soup mix (I got the house brand at Stop and Shop
  • 1 tbsp Worcestershire sauce
  • 1 small onion diced
  • 2 cups mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/4 cup water
  • 3 tbsps corn starch

Directions

Preheat oven to: Slow Cooker - Probably Low Heat

DO NOT SKIP THIS STEP: In a large skillet over medium high heat add the olive oil. Salt and pepper the stew meat and add in batches to sear on both sides until brown, but do not cook throughtout. Add the stew meat to the slow cooker.

Add the beef broth, dry onion soup mix, Worcestershire sauce, onions, mushroom, and garlic. Cook on low for 5-6 hours or high 3-4 hours. Again, you can easily scale back to half the meat and half the broth if cooking for 2-3 people. 3 pounds of beef is a lot of beef.

30 minutes before it is done cooking, mix together in a small bowl the water and cornstarch. Stir it into the slow cooker and allow it to thicken.

Serve over pasta or mashed potatoes (I favor mashed potatoes)



My Notes

This recipe really worked for me, which was a surprise since I have a weird ability to screw up stew recipes. Searing the stew beef at the beginning is VERY important. Don't skip this step. ALSO, the recipe is for a LOT of beef and too much for a few people. I think it would work fine to scale it all back by half (except the garlic ... never the garlic). I got a late start when I first tried this, so I cooked on HIGH for about three hours before switching over to LOW.
